Vegetable Egg Bake



Sometimes you’re just in the mood for breakfast – even when it’s dinnertime. :)


An egg bake can be quick and simple to put together, and you can make use of the items you have on hand.


For example, one of my favorite egg bakes to make is a black bean and spinach egg bake. I will often use ingredients such as mushrooms, bell peppers, parsley from the garden, and, of course, onions and garlic always go in too.


To top it off - you can serve the egg bake with homemade salsa and some sour cream – YUM!
