This Mexican Ground Beef Skillet recipe is a quick, flavorful, one-pan meal, perfect for a main course or sharing with friends on game days.

Tomatoes are a good source of dietary vitamin C, potassium, folate, and vitamin K1, for improved immune health, blood pressure, brain function, and blood clotting (4).  Plant compounds, such as lycopene and beta-carotene, in tomatoes help reduce inflammation and oxidative stress, reducing the risk of diseases, like type 2 diabetes and cardiovascular disease (5).  Further, tomato compounds, such as lycopene, protect the skin from sunburn and premature skin aging (6).


 

Mexican Ground Beef Skillet Recipe

 

Organic Ingredients:


½ tbsp. butter

2 cloves garlic, minced

½ medium onion, chopped

2 large bell peppers, diced

1 lb. 85% lean ground beef

3 tbsp. taco seasoning

1 can diced tomatoes

1 can Rotel diced tomatoes and green chiles

herbs of choice (e.g., oregano, parsley, basil)

 

Instructions:
Melt the butter over medium-high heat in a large skillet.
Add the garlic, onion, and bell pepper.  Sauté for about 3 minutes.
Add the ground beef and sauté for another 10 minutes, or until the meat is cooked through.
Add the taco seasoning, tomatoes, and Rotel and cook for a few more minutes to blend.
Season with herbs and serve over brown rice with shredded cheese.
