Broccoli and Carrot Slaw Salad

It feels like summer has just about arrived here in Texas, and that makes me think of picnics and lighter fare like salad! There are all types of salads that we can make, but one that we have recently enjoyed in our home is a Broccoli and Carrot Slaw Salad. I took a little help from Trader Joes and purchased their precut broccoli/carrot slaw. To that, I added some walnuts, peas, and red onion. For the dressing, I used some organic mayonnaise, apple cider vinegar, and honey with turmeric and a little sea salt and black pepper. For those who may struggle with purines (people with gout or kidney disorder), you can substitute bell peppers for the peas, this will provide a sweet crunch, without the increased potential for uric acid build up. Here’s a recipe that you may enjoy if you don’t care for raw broccoli and want to include a bit of organic bacon for more protein https://www.simplyrecipes.com/recipes/broccoli_salad/.

Enjoy!
