Broccoli Frittata

With the arrival of spring, and summer just around the corner, many of us will be encouraged to spend more time outside in the evenings. However, after a long day at work or school, there’s not always a lot of time for dinner preparation.

To keep dinner simple, delicious and light (without skimping on nutrition) we may want to serve up an easy-to-make, one-pan meal. The broccoli frittata is a simple, nutritious dish that the family can enjoy and will give you the fuel and supportive nutrients necessary for an evening outside while not weighing you down.


I use a large frying pan to heat some avocado oil and add some onion, garlic, parsley, and broccoli for a few minutes to soften. Then, season this with sea salt, pepper and move the mixture to a bowl and set aside. Adding a bit more avocado oil, or grass-fed butter, to the pan I then heat and pour in beaten eggs. Remember, you can add your favorite spices to the egg mixture for added nutrition. I like to add turmeric and black pepper. Then, pour the broccoli mixture back into the pan with the eggs. Sprinkle some parmesan cheese over the top and cook on the stove-top until the eggs are mostly set, and move the pan to the broiler for about 5 minutes to finish cooking.


Serve up the frittata with some fruit on the side (avocado, berries, or mango) for added nutrition like healthy fats (omega-3’s) from the avocado, antioxidants in the berries, and micronutrients in the mango.
