Autumn has arrived here in Texas, as our 40-degree drop in temperature and rainy days would indicate, and the cooler temperature has me thinking about soup for dinner!

With activities this evening, dinner needed to be quick as well as healthy and a meal that everyone would enjoy, so I made chicken and black bean soup.

I used black beans, great northern beans, chicken breast, carrots, spinach, kale (from the garden), onion, garlic, chicken broth, and several herbs and spices like parsley, oregano, cumin, onion and garlic powders, curry, turmeric, and pepper. With these ingredients on hand, dinner came together in about 30 minutes.
