This delicious Creamy Brie over Cod recipe comes together in under 30 minutes, is simple to prepare, and provides essential nutrients to help keep us healthy.

Cod is a lean, nutrient-dense fish that provides protein, along with essential nutrients such as vitamin B12, iodine, selenium, and healthy fats (omega-3s) (1).


Vitamin B12 is an essential nutrient that we obtain from consuming food from animal sources such as seafood, meat, poultry, eggs, and dairy (2).  Vegans and some vegetarians must supplement to obtain enough B12 for proper body function (3).


Consuming fish is an excellent way to obtain vitamin B12, which is necessary for proper development, nervous system function, red blood cell formation, and the synthesis of our DNA (2).


Iodine is an essential mineral necessary for proper growth, metabolism, and brain development, as the body needs iodine to produce thyroid hormones (4).


Selenium is an essential mineral necessary for thyroid hormone production, as well as DNA synthesis, reproduction, and proper immune system function (5).


 

Brie is a soft, creamy cheese made from cow's milk and has an edible white mold rind.  This high-fat, nutrient-dense cheese provides protein, vitamin B12, vitamin B2, and calcium (6).


As a good source of protein, consuming brie can help build and maintain bones, muscles, skin, and blood, improve satiety for weight management, help control blood sugar levels, and support immune function (7).


As a good source of riboflavin (vitamin B2), consuming brie helps support growth and development, the creation of energy, and cellular function (8).


Calcium is an essential mineral needed for strong bones, proper nerve and muscle function, and vitamin D metabolism (9). Consuming brie can help to support these functions.

 


Creamy Brie over Cod Recipe

 

Ingredients:


2 cod fillets, wild-caught

½ tbsp extra virgin olive oil

4 ounces brie cheese (cut into pieces)

2 garlic cloves, minced

½ small onion, diced

4 mushrooms, diced

1 cup spinach, chopped

1 tbsp lemon juice

1/8 cup whole milk, or coconut milk

1/8 cup sour cream

1 tsp basil, oregano, or parsley

Sea salt and black pepper to taste

(Serves 2)

 

Instructions:
Preheat the oven to 375 degrees F.
Place the cod fillets on a parchment-lined baking sheet and bake for approximately 20 minutes, or until cooked through.
Heat the oil in a large pan over medium heat, add the garlic, onion, mushrooms, and spinach, and cook for about 2 minutes.
Add the milk and sour cream and stir till heated.
Add the brie (remove the rind for a milder flavor) and cook until melted and the cheese sauce begins to thicken.
Add the lemon juice, herbs, and spices, and stir to combine.
Spoon the sauce over the cod and enjoy!

 

*This dish pairs well with brown rice or a baked potato and asparagus, Brussel sprouts, or broccoli.
