A hearty chicken and mushroom dish


This one-pan dish comes together quickly, serving as the main part of your evening meal, and pairs nicely with wild rice and green beans or a side salad.

 

A few health benefits of this dish

 

Chicken breast is a low-calorie, high-protein meat that can enhance satiety, weight loss, and help maintain muscle and bone health (1) (2).


High in B vitamins like niacin (B3) and pyridoxine (B6), chicken breast consumption helps convert food into energy, boosts the immune system, maintains nerve function, balances blood sugar, and aids oxygen delivery to body tissues (4) (3).  Additionally, as a good source of minerals such as phosphorus, zinc, and selenium, consuming chicken breast can enhance energy production, support bone health, bolster immune system function, and help prevent cell damage by reducing oxidative stress (5).


Mushrooms are another low-calorie, nutrient-dense food that is high in protein and also a dietary source of vitamin D (6).  Vitamin D is an essential nutrient that helps the body absorb calcium for healthy bones, move muscles, support immune health, and aid nerve transmission between the brain and body (7).

Creamy Garlic Mushroom Chicken Recipe:

 

Organic Ingredients:


4 small chicken breasts

1 tbsp. avocado oil

1 tbsp. butter

12 ounces white mushrooms, sliced

3 cloves garlic, minced

¾ cup bone broth

½ tsp. lemon juice

½ tsp. Dijon mustard

½ tsp. Italian seasoning

¾ cup heavy whipping cream or coconut cream

sea salt and black pepper to taste

 

Instructions:

In a large skillet, heat the oil over medium heat.
Add the chicken to the hot pan and cook for about 5 minutes on each side until golden brown.  Set the chicken aside on a plate.
Melt the butter in the hot pan, add the mushrooms and Italian seasoning, and cook until the mushrooms are seared.
Add the garlic, broth, lemon juice, and mustard to the pan, and stir to combine.
Add the cream and chicken to the pan, and cook for an additional 5 minutes or until the chicken is fully cooked and the sauce has thickened.  Season with salt and pepper and enjoy!
