Huevos Rancheros - Scrambled

As the holidays come to a close, a new year begins, and we finish with the holiday clean up, we may want to keep things simple when it comes to dinner-time.


Here’s a healthy recipe that you can adjust to what you have on hand – in the pantry or frig – and it can come together in less than 30 minutes.


Just scramble some organic free-range eggs (lightly beaten) with black pepper, sea salt, and turmeric (and whatever herb/spice you like), over medium-high heat, chop up some fresh veggies - I used cherry tomatoes, red onion, jalapeno, spinach, and fresh cilantro – and place the eggs (divided) onto small corn (organic) tortillas. I also shredded some sheep cheese for topping, but you can use black beans, avocado, or whatever else you have on hand. Finally, I squeezed a bit of fresh lime juice over the top of each prepared tortilla, and that was dinner!
