#Tex-Mex Beef and Quinoa One-Pan Dinner

Nutritious and tasty thirty-minute meals are so helpful during the busy work and school weeks, but when these meals can be done all in one pot or pan, they become a favorite meal to make and serve.


One dish that we have recently tried is my version of a Tex-Mex Beef and Quinoa meal.


With one pound of ground grass-fed organic beef, ½ an onion, about 12 ounces of tomatoes, from the garden :) 1 cup of green beans, a 15 ounce can of black beans, one diced jalapeno, 1 cup of quinoa, 1 ½ cups of bone broth, ½ cup of water, 2 tablespoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon turmeric, ½ teaspoon garlic powder, and some sea salt and pepper, dinner was ready in about 30 minutes.


Quinoa, a seed not a grain, is crunchy with a nutty flavor and has nutrients, such as folate, iron, magnesium and zinc, micronutrients necessary for proper body function, as well as antioxidants like quercetin. In addition to providing valuable nutrients, quinoa adds bulk to this dish.
