Thai Coconut Soup


Soup is one of my all-time favorite meals to put together and eat - although some in my family would not agree with this sentiment – S O N ;).


All you do is chop, dump into a pot and simmer, what could be easier!


Soup can be quick, economical, nutritious, and delicious!


You can make use of what’s in the frig, pantry, garden, spice rack (let’s not forget those fabulous spices!) and freezer.


Some of my favorite soups include minestrone, spicy taco, and of course chicken and brown rice when someone is feeling a bit “off.”


Several months ago I tried a Thai Coconut Soup when we were eating out, and, although I didn’t think so before tasting it, I liked it! So, this one got added to my favorites list too. :)

**One side note here…if you use dried lemongrass, I recommend putting it into an herb ball and latch it properly. Once, my herb ball came open, and we were picking woody stems out of our mouths the entire dinner!
