This Spinach & Goat Cheese Frittata can be a quick, healthy, and easy dinner for any night of the week…or have it for breakfast or lunch!

 

Health benefits of this dish

 

Goat cheese (chevre) is a dairy product made from goat’s milk, which can be found in various flavors and textures.  As a good source of high-quality protein, healthy fats, and magnesium, goat cheese consumption can suppress appetite, increase satiety, and support healthy cell structure and bone health (1) (2) (3).  Containing more medium-chain fatty acids than cow’s milk, goat milk is less likely to be stored as fat, as it is rapidly broken down and absorbed by the body (4).  Goat milk contains less lactose (milk sugar) than cow or sheep milk, and may be more easily digested in those who struggle to tolerate lactose (5).  As a good source of selenium and zinc, goat milk consumption helps to prevent neurodegenerative diseases (6).

 

Spinach is a dark leafy green vegetable low in calories and carbohydrates and high in insoluble fiber for improved digestion and a reduced risk for constipation (7).  As an excellent source of nutrients like vitamins C, K, and folate (B9), spinach consumption supports immune function, skin health, and tissue growth (8) (9).  Spinach boasts many plant compounds that protect us from disease, like quercetin, which can reduce cholesterol levels, lower blood pressure, and inhibit the spread of cancer cells (10).

Spinach & Goat Cheese Frittata Recipe

 

Ingredients:


2 tsp. extra virgin olive oil (EVOO)

4 eggs

¼ tsp. sea salt

1/8 tsp. black pepper

2 garlic cloves, minced

2 cups spinach, chopped

1 medium yellow or red bell pepper

2 ounces goat cheese

herbs of choice (e.g., oregano, parsley, sage, thyme)

 

Instructions:
Preheat the broiler to high.
In an oven-safe 8-inch skillet, heat the oil over medium/high heat.
In a bowl, beat the eggs, salt, and black pepper.
Add the garlic, spinach, and bell pepper to the skillet and saute for about 2-3 minutes.
Reduce the heat to medium/low and pour eggs into the skillet over the veggies.
Add the goat cheese over the top.
Cook until almost set, about 4 minutes, then place the skillet under the broiler for 1-2 minutes until browned.
Serve with a side salad and enjoy!
(Serves 1-2 for dinner)
